Marzipan roulade / Marcipanova rolada





Marcipanova rolada


Sestavine
Testo:
• 75 g sladkorja
• 80 g mehke bele moke
• 3 jajca

Krema:
• 120 g čokoladne nutele zmešamo z
30 g zmletimi keksi
• 120 g lešnikove nutele zmešamo z
30 g zmletih lešnikov
• po želji (120 g bele kreme):
1 beljak
 80 g margarine
 80 g sladkorja

Nadev:
• 200 g marcipana

Preliv:
• 70 g jedilne čokolade


Priprava
Iz beljakov stepemo sneg, ki mu dodajamo sladkor in
mešamo, da postane zelo trd, nato dodajamo
rumenjake, še malo premešamo in nato narahlo vmešamo
še moko. Maso porazdelimo po s peki papirjem obloženim
pekačem, velikosti 30x40 cm in pečemo 8 minut na 180°C.
Ohlajeni biskvit pokrijemo z vlažno krpo in malo počakamo,
potem ga namažemo z rjavo kremo, nanjo damo lešnikovo
kremo in nanjo belo ter po dolžini marcipan zvaljan v
klobaso, skupaj s peki papirjem trdo zavijemo in ohladimo.
Rolado po želji prelijemo s stopljeno jedilno čokolado.

Priprava bele kreme
Kremo pripravimo tako, da segrejemo 60 g sladkorja s 3 žličkami vode. Mešamo, dokler
se sladkor ne raztopi, potem naj sirup na srednji vročini vre še tri minute, vmes ne
mešamo. Če sladkor med tem ob robovih začne kristalizirati, s čopičem nanesemo malo
vode na posodo.
V tem času iz beljaka stepemo čvrst sneg, dodamo preostali sladkor in stepamo, dokler
se sneg ne sveti. Nato v sneg vmešamo vroč sladkorni sirup in stepamo. Ko je masa
hladna vmešamo še zmehčano margarino.

Grandma´s christmas cookies / Babičini božični piškoti



My grandma bakes these cookies every year and this year I helped.  :)) They are so delicious!! We all love them :)
Vanilla croissant cookies with walnuts, Coconut kisses, Chocolate coconut cookies and Linzer cookies.

Moja babica speče te piškote vsako leto. Letos pa sem ji priskočila na pomoč. Vsi jih imamo tako radi, saj so res neverjetno dobri! :)

 Vanilijevi rogljički z orehi/lešniki, kokosovi poljubčki, čokoladni krapki s kokosom in linške očke. Najboljši! Zelo okusni! :)

Chocolate crinkles / Razpokani čokoladni piškoti





Chocolate crinkles



Serves: 6 dozen
A fudgy brownie like cookie!!

Ingredients

1/2 cup canola oil
4 squares unsweetened chocolate, melted
2 cups sugar
4 eggs
2 tsp. vanilla
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 cup icing sugar


Instructions
1.     Mix oil, chocolate and sugar together in a bowl of a standup mixer with a paddle attachment. Add eggs one at a time, blending well after each addition. Add vanilla. Whisk flour, baking powder and salt together and add to the oil mixture in two additions. Chill for 4 hours or overnight.
2.     Heat oven to 350F. Taking a teaspoon of the dough roll it into a ball and then roll into the icing sugar. Place 2″ apart on a greased baking sheet. Bake for 10-12 min. Do not over bake.

Razpokani čokoladni piškoti



Za okoli 6 ducatov piškotov.
1 skodelica ustreza cca. 250 ml volumna.


Sestavine:


½ skodelice rastlinskega olja
4 kvadrate nesladkane čokolade (cca. 113 g), stopljene
2 skodelici kristalnega sladkorja
4 jajca
2 čajni žlički vanilije
2 skodelici moke
2 čajni žlički pecilnega praška
½ čajne žličke soli
1 skodelica sladkorja v prahu

Priprava:

1.    V prvi skledi zmešaj olje, stopljeno čokolado in kristalni sladkor. Postopoma dodajaj jajca. Vsako dobro vmešaj. Dodaj vanilijo.
V drugi skledi zmešaj moko, pecilni prašek in sol, ter to dodaj k prvi posodi v dveh delih. Obakrat dobro zmešaj.
2.    Segrej pečico na 175°C. Iz testa s pomočjo čajne žličke oblikuj kroglice ter jih povaljaj v sladkorju v prahu. Postavi jih na peki papir narazen približno 5 cm.

Peci 10-12 minut. Ne zapeci preveč.

"Bounty" Chocolates / Bounty čokoladice

Homemade »Mounds« or »Bounty« chocolates


makes over 2 dozen chocolate logs or 4 dozen balls

Ingredients
4 oz (one stick) salted butter, softened
6 oz (2 1/4 cups) confectioner's sugar
8 oz (2 3/4 cups) shredded coconut
1/2 tsp vanilla
8 oz good quality dark chocolate

Cream butter and sugar. Add coconut and vanilla, and mix until well incorporated.
Form into small logs or balls, and place on a wax paper lined tray.
Refrigerate for 20 minutes.
Meanwhile, melt chocolate in the microwave at the defrost setting, or over double boiler.
When melted, using a fork or dipping tool, begin to dip each coconut shape into the chocolate.
Once completely coated, place back onto the wax paper lined tray, and if desired,
sprinkle the top with a little coconut. Repeat with the rest of the candies.

Keep the candies refrigerated, but remove at least one hour prior to serving.
They are fine at room temperature for a few days, as long as it's not too warm.

Domače »Bounty« čokoladice


113 g zmehčanega masla
170 g sladkorja v prahu
227 g nastrganega kokosa
½ čajne žličke vanilije
227 g črne čokolade











Zmešamo maslo in sladkor v prahu, dokler ne postane gladko. Dodamo kokos in vanilijo ter vse dobro premešamo. Oblikujemo majhne kvadratke ali kroglice ter jih postavimo na peki papir. Damo v hladilnik za 20 minut.
Medtem stopimo čokolado na vodni kopeli. Z vilico ali palico vsak kvadratek/kroglico pomočimo v čokolado, ga/jo postavimo nazaj na peki papir (zato da se ne sprime) ter potrosimo s kokosom. Čokoladice hranimo v hladilniku.

Christmas cookies with Nutella


Butter dough:
1 cup (8 oz) salted butter, softened
1/2 cup (4 oz) sugar
2 cups (10 oz) good quality, sifted all-purpose flour

Cream butter and sugar together, then add flour and mix until a dough forms.
Place the dough onto to a well-floured surface, and roll out to about 1/4" thickness.
Cut the dough into a desired shape.

Place the cookies on the baking sheet and bake in a 350°F oven for 8-10 minutes.
They should not start to brown.

Allow to cool completely, then pair off similar shaped cookies together,
placing the smoothest cookie on top. Spread half of the cookies with Nutella. Place cookie on top of each filled cookie.

 Božični piškoti z Nutello

(1 skodelica ustreza volumnu 250 ml.)

1 skodelica zmehčanega masla
½ skodelice sladkorja
2 skodelice namenske moke











Zmešamo maslo in sladkor, da postane gladko in penasto. Dodamo moko in zgnetemo v gladko testo. Testo razvaljamo na debelino cca. 0,5 cm in oblikujemo z modelčki.

Pečemo na peki papirju v predhodno ogreti pečici na 175°C okoli 8-10 minut. Piškote ne smemo preveč zapeči.
Polovico piškotov namažemo z Nutello, na katere nato položimo ostale nenamazane piškote.
Piškote lahko okrasimo s čokoladnim desertnim prelivom (sladki greh).

Raffaello snowmen / Raffaello snežaki

Raffaello balls
Recipe 1

Ingredients:
25 dag sugar
1 dl water
½ of butter (125 g of butter)
25 dag powdered milk
20 dag dried shredded coconut
almonds

Instructions:
Combine sugar and water in a pot and boil, then add butter till it melts down. Turn off the heat, add powdered milk and coconut and stir them in. Leave in the refrigerator to cool. Roll 1 inch balls with your palms , placing an almond in the center of each ball, and then roll the balls in leftover shredded coconut.

Raffaello balls
Recipe 2 with vanilla pudding

Ingredients:
2 vanilla pudding
12 dag butter
10 dag dried shredded coconut
5-6 tbsp sugar
½ l milk

Instructions:
Combine milk and butter in a pot and boil. Mix the rest of the ingredients and stir them in milk and butter like pudding. Leave in the refrigerator to cool. Roll 1 inch balls with your palms , placing an almond in the center of each ball, and then roll the balls in leftover shredded coconut.




Ingredients:
fondant or marzipan
food colours
chocolate granules for eyes and buttons or you can draw them with food colours
toothpicks/skewers






Instructions:
To make a snowman we need two raffaello balls of different size. We use the larger ball for the body and the smaller for the head. Then thread them onto a skewer or toothpick.

For eyes and buttons:
-      use chocolate granules or
-      make them from fondant or marzipan or
-      simply draw them with food colours.

For the nose:
-      use the fondant or marzipan, dye it to orange using food colour
-      break the top of the skewer/toothpick off and push it to the nose to anchor it between the eyes

For scarf and hat:
-      use the fondant or marzipan
-       colour them into a desired colour

We draw the mouth with black food colour.

Raffaello snežaki

Raffaello kroglice 1 


Sestavine:
25 dag sladkorja
1 dl vode
½ masla (125 g masla)
25 dag mleka v prahu
20 dag kokosa

Priprava:
Sladkor in vodo skuhamo, da zavre, dodamo maslo, da se stopi. Dodamo mleko v prahu in kokos. Maso pustimo, da se malo shladi, nato iz mase oblikujemo kroglice (za oreh velike) in jih povaljamo v kokosu. V sredino damo olupljene mandelje.

Raffaello kroglice 2  z vanilijevim pudingom

Sestavine:

2 vanilijeva pudinga

12 dag masla

10 dag kokosa
5 - 6 žlic sladkorja
1/2 l mleka


Priprava:
V polovici mleka zavremo maslo, ostale sestavine zmešamo in zakuhamo kot puding v mleku z maslom.
Pustimo, da se ohladi, nato damo za nekaj časa v hladilnik. Oblikujemo kroglice in jih povaljamo v kokosu.

Dekoracija snežakov:

Sestavine:
- fondan ali marcipan
- prehrambena barva
- čokoladne mrvice za oči in gumbe
- zobotrebci




Priprava snežakov:
Za snežaka potrebujemo dve kroglici Raffello različne velikosti. Skozi večjo kroglico zapičimo zabotrebec, nato pa nanj zapičimo drugo kroglico, ki je glava.

Za oči in gumbe uporabimo čokoladne mrvice, lahko jih naredimo tudi iz fondana ali marcipana. Korenček za nos naredimo iz fondana ali marcipana, ki smo ga pobarvali oranžno. Vrh zobotrebca (cca. 1 cm) odlomimo, polovico zabodimo v nos, drugo polovico pa na del med očmi. Šal in kapo naredimo iz fondana ali marcipana, ter ju z malo vode zalepimo na snežaka. S pomočjo črne barve narišemo usta.

Cranberry jam thumbprint buckwheat cookies / Ajdovčki z brusnično marmelado



Jam thumbprint buckwheat cookies

Ingredients:

Dough:
80 g of all-purpose flour
60 g of  buckwheat flour
90 g of ground walnuts
30 g of  cacao powder
100 g of softened butter or margarine
50 g of powdered sugar
1 egg yolk
knife´s tip of cinnamon
knife´s tip of powdered cloves

Filling:
Cranberry jam/ other jam

Chocolate icing:
50 g of chocolate
50 g of butter/margarine

50 g of chopped walnuts

Preheat oven to 170°C (338°F)

In a bowl combine all-purpose flour, buckwheat flour, ground walnuts, cacao powder, powdered sugar, cinnamon and powdered cloves. Add butter and egg yolk and mix until just combined.

A tablespoon of dough at a time form into a ball by rolling dough between your palms. Place balls onto baking sheet - using your thumb or a small spoon press an indent into the center of each ball.

Bake cookies 10 minutes, remove from oven and gently repress the center of the cookies with the back of a small spoon to recreate the larger thumbprint. Fill cookies with jam, and bake 5 minutes (150°C).

Cool the cookies. Holding each cookie by its bottom, dip cookie in the  chocolate icing and sprinkle walnuts over top.


Ajdovčki z brusnično marmelado



Testo:
• 80 g moke
• 60 g ajdove moke
• 90 g mletih orehov
• 30 g kakava v prahu
• 100 g surovega masla ali margarine
• 50 g sladkorja v prahu
• 1 rumenjak
• noževa konica cimeta
• noževa konica mletih klinčkov

Nadev:
• gosta brusnična marmelada/ druga marmelada (po želji)

Obliv:
• 50 g jedilne čokolade
• 50 g margarine

Posip:
• 50 g nasekljanih orehov

 Priprava

Zamesimo testo in z majhno žličko polagamo majhne kupčke na s peki papirjem obložen pekač. V vsakega z ročajem kuhalnice ali prstom naredimo luknjico.

Pečemo približno 10 minut na 170°C.
Ko piškote vzamemo iz pečice jih nabrizgamo z marmelado in damo za 5 minut nazaj v pečico na 150°C.

Ohlajene do polovice pomakamo v čokolado in posujemo z orehi.

Piškoti so manj sladki. Za bolj sladke piškote dodamo sladkor ali uporabimo sladkani instant kakav.
