Cranberry-Orange Cookies / Pomarančni piškoti z brusnicami

Cranberry-Orange Cookies
Recipe
3/4 cup salted butter, softened
1 cup granulated sugar
1 egg
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1-2 tablespoons milk, if necessary
1/2 cup dried cranberries
1 tablespoon orange zest
For rolling cookies in: 1/2 cup granulated sugar + 1 tablespoon orange zest
Preheat oven to 350°F.
In the bowl of an electric mixer, beat together the butter and sugar until light and fluffy. Add egg and mix until incorporated.
In a separate bowl, whisk together the flour, baking powder, and baking soda. Add to the butter mixture and mix until just incorporated. If necessary, add 1-2 tablespoons milk, just until the dough comes together. Fold in the cranberries and orange zest. Chill dough for 10 minutes.
Meanwhile, place 1/2 cup sugar and 1 tablespoon orange zest in a small bowl and rub zest into sugar until thoroughly combined and fragrant.
Roll dough into large 1-inch balls. Roll in orange sugar and place on baking sheet, flattening slightly with your hand.
Bake for 10-12 minutes or until edges just start to turn golden.
Makes about 2 dozen cookies.

Pomarančni piškoti z brusnicami
Za okoli 20 piškotov.

1 skodelica ustreza pribl. 250 ml volumna.
3 /4 skodelice zmehčanega masla (piškoti so odlični s 190 g masla)
1 skodelica kristalnega sladkorja (jaz uporabim le polovico skodelice sladkorja)
1 jajce
2 skodelice namenske moke
1 ½ čajne žličke pecilnega praška
¼ čajne žličke sode bikarbone
1-2 žlice mleka (po potrebi)
½ skodelice posušenih brusnic
1 žlica pomarančne lupine
Mešanica, v
kateri povaljamo piškote: ½ skodelice kristalnega sladkorja + 1 žlica pomarančne lupine
Pečico predhodno segrejemo na 175°C.
V prvi skledi zmešamo maslo in kristalni sladkor,
dokler ne postane gladko in penasto. Dodamo jajce in dobro zmešamo.
V drugi skledi zmešamo moko, pecilni prašek in sodo
bikarbono. To dodamo k prvi skledi in vse skupaj zmešamo. Po potrebi dodamo 1-2
žlici mleka (če je mešanica presuha in se ne sprijema). Vmešamo
brusnice in pomarančno lupino.

Medtem v manjši skledi zmešamo ½ skodelice sladkorja in 1 žlico pomarančne lupine, v kateri bomo povaljali piškote.
Iz testa oblikujemo kroglice (velikosti pribl. 2,50cm), jih povaljamo v sladkorju in pomarančni lupini ter jih postavimo na peki papir. Z dlanjo jih rahlo potisnemo navzdol, da dobijo ustrezno obliko.

Uporabila sem 190 g masla in polovico manj sladkorja. Piškoti so bili odlični. :)
